His foundational experience was further developed working on an exclusive yacht and at prestigious hotels in Juan-les-Pins, France, and Queensland, Australia. Upon his return to London, Baines served as the official Armani chef, showcasing his versatility in high-profile culinary environments.
He then elevated his standing in London’s restaurant scene by serving as Head Chef at Daphne’s restaurant in South Kensington for three years, a pivotal role that cemented his early reputation. In 1996, Ed Baines expanded his entrepreneurial footprint by co-founding Randall & Aubin in Soho with business partner James Poulton, establishing a significant Anglo-French brasserie. Concurrently, Baines developed a robust media career, launching his first TV series, ‘Lunch with Ed Baines,’ on Carlton Food Network in 1998. Continuing the expansion of his successful restaurant portfolio, Ed Baines co-owned Randall & Aubin Manchester, which officially opened in May 2017.
