The former GBBO star, culinary queen and influencer has put together a gorgeous “seasonal stunner” that’s vegan but soaked in booze – naughty and nice.

In another edition of the ongoing series of recipes she’s produced for GQ Online, Ruby Bhogal has whipped up a Pimm’s-soaked “vegan traybake” that’s reportedly a “revelation.” Made from of a zesty lemon sponge and loaded with vanilla coconut cream and Pimm’s-infused jelly, this one’s come just in time for summer. Speaking about her latest creation, Ruby remarks: “that’s right – this is a Pimm’s-inspired vegan traybake. You’ve got a zingy and moist (gross word, I know, but the only accurate one) lemon sponge, drowning under a pillow of vanilla coconut cream and topped with Pimm’s soaked fruit. If that isn’t enough, there are also little nuggets of Pimm’s jelly amongst the madness bringing in little bursts of summer and sheer happiness… and it’s all vegan.”

“Go ahead. Please. Name me a better summer drink than a Pimm’s. Go on, I’m waiting…”
