Nicole Giacobbo worked as a Registered Dietitian (Temporary and Casual) for Alberta Health Services, providing full-time coverage to supportive living and mental health sites, and offering specialized services in outpatient clinics and various inpatient units.
Nicole Giacobbo holds a Bachelor of Science (BSc) in Mechanical Engineering from the University of Alberta (2003-2008), where she also completed a Co-operative Program. Following this, she worked as a Mechanical Engineer in Training at Dow Chemical from July 2008 to August 2011. She then shifted her academic focus, pursuing a second Bachelor of Science (BSc) in Nutrition and Food Science with an Integrated Dietetic Internship at the University of Alberta, graduating in 2016. During her nutrition studies, Nicole was recognized on the Dean’s List and achieved a cumulative GPA of 3.9. Her early experience in the nutrition field included a Dietetic Internship with various placements such as Extendicare Michener Hill (Intro Clinical Placement, July 2014), Alberta Health Services (Community Placements, May-July 2015), Revive Wellness Inc. (Community Placements, May-July 2015), Primary Care Network (Advanced Clinical Placements, August-November 2015), Covenant Health (Grey Nuns Community Hospital, Advanced Clinical Placements, August-November 2015), and Alberta Health Services (Food Service Placement, December 2015-March 2016). She also volunteered as a Community Dietetic Volunteer for Yellowhead Tribal Council (July 2013-August 2014) and as a Young Chefs Facilitator for E4C Nutrition & Community Services (January 2013-March 2014), along with research assistant roles at the University of Toronto (May 2013-January 2014) and the University of Alberta (May-August 2013).
Nicole began her career as a Registered Dietitian with Alberta Health Services. She worked as a Registered Dietitian (Casual) from June 2016 to February 2018, providing coverage in outpatient clinics (Obstetrics, Urogynecology, Menopause, Adolescent Pregnancy, Postpartum Preeclampsia, HIV, Feeding and Swallowing) and inpatient units (Obstetrics, Surgery, Medicine, Psychiatry) at Royal Alexandra Hospital. Subsequently, she served as a Registered Dietitian (Temp) from February 2018 to March 2019, covering supportive living and mental health sites. She took maternity leave from March 2019 to August 2020. In October 2020, Nicole established her own practice, Nico Nutrition Inc., where she currently serves as the Private Practice Dietitian and Owner. At Nico Nutrition Inc., she provides personalized nutrition counseling focusing on general nutrition, women’s health, intuitive eating, and meal planning and culinary skills. She offers services locally in Edmonton and via online platforms across Alberta.
Her commitment to foundational communication in her field was highlighted by Dr. Nancy Bray, her instructor for the Communication Theory and Practice course at the University of Alberta. Dr. Bray noted Nicole’s “outstanding results on every single assignment and test,” and emphasized her ability to write and present effectively, being “extremely sensitive to the nuances of audience.” Dr. Bray concluded, “She will make a fabulous dietician and employee.
