Rhian Williams is a popular vegan and gluten-free food blogger whose journey to a plant-based diet started when she was diagnosed with ulcerative colitis in 2015. Fast forward eight years, and she is a popular Instagram presence thanks to her blog, Rhian’s Recipes, which has an amazing 125,000 followers. Her blog website features scores of recipes as well as meal plans and cookbooks.
Williams is from the UK but is currently based in Japan. When she was diagnosed with ulcerative colitis (a serious condition that inflamed the bowels and colon and can cause life-threatening complications), she was forced to totally rethink her diet. This led to her becoming vegan and also eschewing gluten. She began blogging about her journey and the recipes she’d discovered, and her posts found an appreciative audience that continues to grow to this day.
